i have this dilemma as well. It seems obvious, but I think the best seats to use are out of a modern convertible. think about it. they typically have the seatbelts built in, but they are designed to fold forward and slide forward specifically for rear pass. entry. some even do it under power...
i kept hunting for saab 9-3 convertible seats, but they are pretty difficult to find. they would be just about perfect if you can find some. they have a release lever built into the top of the seatbelt mount.
like the ones below. there are many other makes that have similar convertible seats, so you might keep a lookout.
