If it's the OD of the bearing that's a little big you could take the column to an exhaust shop and have them expand the end of it just enough where you can get the bearing in.
Yes the smooth bore u-joints just weld on, and yes you could grind the shaft to make a DD. The most important part is to make sure the u-joints are in phase.
