Bottom line is if you have fallen in love with the truck, then it's worth what you are willing to pay. I probably paid too much for my '67 short bed, but I don't regret one penny, and I'll have the truck until I can't drive any more. He is asking more because of the originality, though, such as the paint color and the trim, which you said you wanted to change - so you would be paying for something you don't even want. You should be able to find one with no trim and a non-original paint job and not have to pay a premium for it.
