You need to have your trans and engine bolted together to set the angle.
I have the same trans mount as you and had to set it below my frame to get the correct angle for the engine/trans. I do have a Chevelle clip so I know that will make a difference.
As OrrieG said that is hard work and should be done with someone else helping. Good luck.
