One thing you might try is when it happens... is to pull the fuel line off at the carb,have a rag handy because if it is vapor lock it usually squirts fuel and hot vapor pretty far. If it does then vapor lock is your issue for sure. If you have a surface temp gun it would be a good idea to see how hot the line to the carb is,as well as the fuel pump,carb and intake manifold ....
I was seeing 220+ degrees because of my electric fan setup is great at keeping the engine temp in check but was seriously adding to underhood temps not to mention it was 100 degrees outside...
If your fuel line temp is 180 deg or cooler,you may want to check for a air leak in between the tank and fuel pump....fuel pump sucking air gives the exact same symptoms as vapor lock.Make sure your fuel pump is making 5 psi also....
