Kurt, Can you post a pic of your temp gauge at normal operating temp with the factory 67-72 sender in the 5.3? If so, we can compare it to the normal temp needle position on mine with the autometer sender.

I have a genIV 6.0L and AutoMeter gauges. I'm not using much that "was" factory. Here's the only pic I have of my "auto meter sender" and location.
Between water heater hoses, just above header pipe. Notice "blue" connector.


my temp gauge stays at 180 or just left of...which is almost straight up.
