Removing the gas tank doesn't add any leg room. Do not remove the cross piece in front of the tank. That adds strength so the cab doesn't flex.
When I changed my seat, I found a set of mustang buckets which fit well enough to give me about 1.5" of additional leg room because the seat backs are thinner than the truck seat.
I wound up using a 3rd row bench from an astro van because the headrests were removable and didn't stick up above the bottom of the window.
