When you work it hard you get higher fuel pressure and volume. You're using the fuel until you slam the throttle closed. At that point you're flooding a bit. Makes it run rough. Lowers your idle.
You need to lower your float level.
Another problem you might have is your timing.
What's your initial timing and what rpm are you idling at?
