The S10 T5 5 speed is the most common swap and has proven to give great results.
Replace the drum brakes and you'll be surprised how much better they work. Especially with a booster and dual cup master cylinder.
Rebuilding the stock suspension and steering will also be a great improvement. Just new steering components would help a ton. Cheap and easy mod would be a front sway bar.
