It wont affect how the engine runs one bit, but what it will affect is driveability. Those are two different things. Without the speed sensor you will likley have stalling issues when coming to a quick stop, such as coming off a freeway exit ramp where you've been driving, say 65mph, then at the end of the ramp is a red light. Without the VSS the PCM wont realize you've come to that stop and wont compensate for the change quick enough. I found this out years ago when the VSS came unplugged on my old TPI and it began stalling. That was a way simpler system, things have only gotten more complex.
