A professional estimate is a good way to document true value. More than one is even better. Also, receipts and build details can help a lot if you end up in a hassle with the insurance co.
The other thing I was wondering about this is whether an umbrella policy will pay for damaged/totalled vehicle beyond what the auto policy pays. Going to have to look into that.
