Another vote for Firefox. If you want a slower rate of 'feature' updates, get the Extended Support Release. You still get security updates on the normal schedule but things like a 'New and Improved UI' will arrive after folks on the normal release schedule have received and tested them.
You can also specify to use encrypted DNS so your ISP has more trouble tracking what you are searching for. Tools/Options/General/Network Settings/(Check the box labeled "Enable DNS over HTTPS"
