I'm a bit puzzled why the pedal wires would be in twisted pairs.
Twisted wires are usually carrying a AC voltage signal(e.g., speed sensor), or a binary data signal(e.g., GMLAN between computer modules).
The pedal is merely two voltage divider circuits. Each circuit has a 5v positive, a low-reference ground, and a signal wire. The signal wire is progressively moved from 5v to 0v, depending on its position. This is happening independently for both circuits that run through the pedal switch. I don't see how interference will be affecting these wires, since they're neither AC voltage or data.
