Anyone know if 190 deg at the head with a 180 deg t stat is "normal" for these engines?

The 396 that it replaced had a 190 deg t stat and would run at 195 and peak at 210 towing heavy, in hot weather with traffic. Temp sensor was in the manifold which I hear will show a lower temp than the head.

Just trying to find out what the new normal is with this engine.
