In regard to the rockers, my opinion is as long as you keep the floor and floor sub structure in place you won't have any movement issues. I'd go ahead and take plenty of measurements and pictures just to feel good about it, but then cut them out, clean everything up real nice, get some rust preventative on the inside of the rockers, then tack them in place. Throw your doors back on to verify a proper fitment and then burn them in permanently.

On a side note, I see multiple stacks of new tires in your very nice shop... do you run a business or just keep plenty of spares around? It's none of my business for sure... just curious.
