I don't know about the fenders being ruined, I kinda like how they look (but I really want those marker lights back...), but the grass is creating an optical illusion making the door look dented.

As far as the cowl being welded to the fenders and A-pillar, that wouldn't be that big of a deal. If I need the fenders to come off, they make this thing called an "angle grinder" that would do the job lol

You can tell it does need at least one cab corner, though, and I have a feeling they're both missing. But, you can get those for fairly cheap.

Could I just take the vin plate off my '71 cab and replace it on the '68 cab?
