On my 53 Suburban I used marine grade plywood. I stained it then I coated the bottom and edges of the pieces with rust guard paint to protect them from the elements. I too have a notch and raised and widened my wheel tubs.

The AD Suburban's were built around the wood floors so you can't go with one piece floors. I know its not the same body style but it might provide some ideas.
