Are you getting enough fuel? I had a similar overheating problem on my 67 and found out that the in tank fuel pump wasn't hooked up. I was getting enough fuel at ilde but not during high engine loads. I put a holley red fuel pump on and it's running great.
Probably not it but one more thing to think about...
