To each their own. My 82 K10 has the 350/465 with 2.73s and I have no issue. 1st is still low, 2nd to take off, 3rd around town and 4th for 55+ mph. If I were to tow, I would never use 4th. I don't tow any trailers though.
Having had trucks with 2.73, 3.08 3.42 and 3.73, I would ask how often you run 70+ mph. If that is a rare occurrence, then you might like the 3.73s. You should get about 2600rpm at 65. Remember a "33" will measure about 31.5 when mounted. My 31s are 29.5 or so.
