You could always use the old motor as practice for engine assembly. Just use all the old parts and pretend they are new.
I would get your new motor installed before selling the old one. Handy source for those plugs, hose fittings, etc. that new crate motors don't include. Even if you want to get a new part, nice to have the old one to match up.
