If it's still got an L6, it could be a 292. My favorite engine. They can be modified to produce over 200 HP and are 100 lbs lighter than SBCs. They are torque monsters just stock. Not sure about a 250 in that big a chassis.
To make a C truck into a K truck, you pretty much have to find the 4x4 frame and swap the body over. Four wheel drive Subs were rare.
I think the Suburban's 127'' wheelbase was in common with longbed fleetside pickups, but I'm not positive.
With a front winch and a positraction rearend, it would probably go anywhere.
I'd go for it.
