The teardrop trailer folks are having success with clear epoxy because they are applying it over this plywood. Since Plywood has layers bonded to each other at right angles, it is dimensionally stable (won't expand lengthwise or widthwise with changes in moisture). Since the plywood used is very thin, they wont have much expansion in that direction either. I agree that putting a top coat of automobile clear will help with UV damage. Marine epoxies such as West System (very expensive) and Raka already have UV inhibitors.
BTW, never use polyester resin on plywood, it will separate after a while.
