Don't try to remove everything on the first pass, you can always go back over it.
One disk should be enough to complete the roof and then some.

I have some questions on taking this to get it sand blasted. I will be removing the rear end, trailing arms/trailing arm crossmember (as it will be replaced). I will also be removing the front suspension...is it necessary to remove the front crossmember for sand blasting? I see a lot of people do...
