Just for comparison I bought a 2002 5.3 last summer for $800, engine only. Markets may be a different in my area, but still comparable.
Be careful with the "lost title" thing, it may be hard to get rid of the body/frame without it.
As long as you have the time, resources, patience, agreeable significant other/neighbors and space to part it out I would go for it. Just my 2 cents.
