You are correct my SPID was questionable as the font was not correct as it was probably lost and the re-typed at some point. However I did validate the contents of the SPID with GM Canada's Vintage Vehicle services and in fact all the options listed on the SPID are valid. Here is the screen shots of the letter for your reference.
So it is a "documented" GMC with Plaid. 
Thanks for the pics of the tailgate. That is what I plan to do.
