What thermostat for Painless on 195/off 185 Fan Relay Switch

I have a Painless Fan Relay thermostat switch which turns the fan on at 195 and off at 185.
Trying to figure out what engine thermostat I should be running. Engine is a crate 350 with Estreet heads, mild Comp cam, Hedman headers and Edelbrock Performer carb.
I'm not even confident 195 on/185 off thermostat switch is even the right set up for this motor. Think I should be running at least a 180 or 185 engine thermostat.

Your thoughts would be appreciated.

I run a 185 with the same on off that you have. No issues.
