Wheel fitment

Will wheels off of a late model (05-'07) 2wd 1500 fit a '69 2wd with drums? And will they still work if I upgrade to disc and maybe a drop spindle?

quick and easy... no.
If you machine the hole in the wheel, or add a spacer that may or may not be legal in your area, then you can make it work.
The spaccer is needed anyways to keep the wheels from being tucked in too much and looking gay.

Thanks, I like the rally wheels that I've got right now, but I was just thinking about running some newer 17" wheels. Would I just need spacers for the back or all four?

There`s no "dish" in these newer wheels.It wouldn`t handle as wheel as stock narrow wheels.There`s plenty of aftermarket choices in 17".
