Well, if you pull on the choke knob, it should pull the little lever which closes the choke plate inside the carburetor, thus "choking" to bring more gas on a cold start, and visa versa. Pull the air cleaner off, have someone work the choke and you see what's actually going on under the hood. It's quite a simple thing. You might check for vacuum leaks. I can imagine the single barrel carburetor might need attention; though simple, sure can make for some running problems.
I did watch the video I had a similar problem with the 6 cylinder that was in my truck from the start. I got it to run, but ran crappy. Now I have a nice running sbc.
