Talk to me BEFORE making any definite plans for relocating to NM. I'll share the positives and minuses. My wife pines for a move back to Orange Co where she grew up but I don't realistically believe that will happen.

When we had Gearhead Gourmet (pronounce the 't') I started a thread, "Hot Sauce Swap", with the idea we swap local sauces among ourselves. You send me one and I send you one. It never went anywhere, but I did make a swap for some Scott's Sauce with a member from NC. Mmmm Good!
Also, maybe from GG (see above), for some reason I sent a member in CA a box with local apple cider and other good from McCutcheons. I think we were just talking about cider or some other food and I asked for his address to surprise him. I think it's time to try the sauce swap again. I went all day yesterday without hot sauce. It can be done! I ate my chicken fajitas sauceless. Of course, I always put extra shakes of Cayenne and chili powder. I also use this Chili Lime seasoning added in. But the food doesn't come off as spicy hot, just spicy. Spicy = Flavor. There is spicy and there is hot & spicy. I'm glad my gut likes all this stuff. For all those who can't understand how people can enjoy hot sauces, it's real simple. We are all different. Maybe you've heard the saying, "We all have different tastes". This is where the literal meaning of that comes from. I am not a picky eater at all. Not much I won't eat

I'm a fan of mustard. That's why I bought the '71 Custom Camper I had. It was mustard yellow . These days people, at least us guys, go by the GM names for the colors, but back in the day people called Ochre trucks mustard Yellow all the time. But back to food, yes I love mustard. I keep a one tray on the refrigerator door for just mustard and one for just hot sauce.
I was thinking... yes me. I may like my spicy foods, but you won't see me shaking salt on anything. There used to be just a few things I felt still needed just a shake or two on, like eggs (with black pepper of course). But I don't salt eggs any more. I use hot sauce.

Hard boiled eggs MUST have salt. It's the law.
Deviled eggs no salt... Cayenne pepper. One thing That I don't put any kind of sauce on is tamales. Just black pepper. And lots of it. I had a friend that would pour salt on everything. He would salt pepperoni pizza.

I am the only one in my family, but I eat mustard. Burgers, ham sandwiches and corn dogs have to have mustard.

Here’s a few good examples to look for...I’ve tried them all good. For corn dogs typical French’s is tough to beat but the sweet (Bavarian) German styles work well too.

Black pepper is not hot, and I don't eat near as much biscuits and gravy as I once did, but when I do, I drown it in black pepper. I always get teased about liking a little biscuits and gravy with my pepper.

Then for the first time in my life I even bought some bologna from the deli. (I still wont eat the cheap stuff) It's funny how your taste can change over time. Like when I was a kid I loved SPAM. I bought a can a few years ago.And it was disgusting. I don't care what they say in Hawaii. That stuff is gross.

Every day of my married life there has been bologna in my refrigerator, but I don't, won't, will not, eat it.
When I was about ten years old I went to work with my dad and had bologna sandwiches. I got horribly sick that afternoon and it all came up, and I haven't been able to eat the stuff since. Now you give me Spam, and I am happy. Mostly fried on a sandwich with lettuce and tomatoes, and I will have mayo with that please.

I just ordered some of this stuff. We'll see how it goes over.
The Professor Phardtpounders is a Caribbean mustard based sauce. The rocket fuel is a Jamaican jerk sauce. This is going to be interesting. I'm sure that they'll love it.
