Taco Soup
2# cooked hamburger meat
2 cans of Mexican Stewed tomatoes 2 cans of tomato sauce 1 can of Rotel tomatoes 1 or 2 packs of taco seasoning 1 can of kidney beans-drained 1 can of shoe peg corn-drained 1 can of whole kernel corn-drained 1 onion-chopped 2 cups of water Mix all ingredients together in large pot and bring to a boil. Reduce heat and simmer for about 30 minutes Top with cheese and sour cream if you like and eat with tortilla chips or corn chips. Serves: A bunch!

What is shoe peg corn Krue? And is there something different that could be used? I think I know what it is but I am not sure, is it the corn with all the different colored corns in it plus pepers and stuff?

Shoepeg corn has a whiter kernel and a slightly different taste from regular yellow corn. It's good stuff. The corn with red & green peppers is Mexicorn, also good stuff. They're right next to the other canned corn at the store.
My sister makes a very similar (if not the same) taco soup, and it's great. Anybody who hasn't tried it, do so immediately. |

Hamburger?Hmmm...musta substituted the Armadillo.Kinda hard to find around here,too.
I want to crank out a pot of this stuff.I think Safeway sells Mitchell canned shoepeg.It keeps a bit mote crunch than yeller.I bet it would be good topped the way I do chili:chopped raw onions,cheeze of choice,sliced pickled jalapenas,and crumbled tortilla chips.Maybe a dollup of sour cream?Some shakes of favorite hot sauce?BEER???????
