Taco Soup

2# cooked hamburger meat
2 cans of Mexican Stewed tomatoes
2 cans of tomato sauce
1 can of Rotel tomatoes
1 or 2 packs of taco seasoning
1 can of kidney beans-drained
1 can of shoe peg corn-drained
1 can of whole kernel corn-drained
1 onion-chopped
2 cups of water

Mix all ingredients together in large pot and bring to a boil.
Reduce heat and simmer for about 30 minutes

Top with cheese and sour cream if you like and eat with tortilla chips or corn chips.

Serves: A bunch!

What is shoe peg corn Krue? And is there something different that could be used? I think I know what it is but I am not sure, is it the corn with all the different colored corns in it plus pepers and stuff?

I looked it up, and it says it is a long white sweet corn... I've never heard of it either

Hey Krue,I made the taco soup for my wife and kids tonight.She loved it,partly because she didn't have to cook when she got home from work.It is a big hit around my house now.Thanks.

Shoepeg corn has a whiter kernel and a slightly different taste from regular yellow corn. It's good stuff. The corn with red & green peppers is Mexicorn, also good stuff. They're right next to the other canned corn at the store.

My sister makes a very similar (if not the same) taco soup, and it's great. Anybody who hasn't tried it, do so immediately.

Hamburger?Hmmm...musta substituted the Armadillo.Kinda hard to find around here,too.
I want to crank out a pot of this stuff.I think Safeway sells Mitchell canned shoepeg.It keeps a bit mote crunch than yeller.I bet it would be good topped the way I do chili:chopped raw onions,cheeze of choice,sliced pickled jalapenas,and crumbled tortilla chips.Maybe a dollup of sour cream?Some shakes of favorite hot sauce?BEER???????
