I like some foods a bit spicy, but I don't find being able to "tolerate" something so spicy it obliterates the actual taste of the food something I desire.

I had a roommate that had a Korean girlfriend and she would make Kimchi. It was soooo good! But it didn't come out well. I know what you mean.

Still worth it.

Yeah you've got to have that burn. My father in law was in the Korean war. He said the Kimchi smelled awful. He wouldn't go near it. He was more of a mayonnaise on white bread type of guy.

This has got me thinking. I'm going to make some of these...

Kimchi Burgers. Wifey wont like them. But I will. And nobody asked her.

You pretty much had to at least try it,but really had to eat it, so you were use tyo smelling it in your pores. Being stuck in close quarters of a comm van with locals and those who ate the stuff was rough unless you partook in the burn:

I keep some of these in the truck to snack on. Not terrible hot , just enough to let you know it is there. Could not get the wife to try it twice, but to be fair she thought it was a regular one the 1st time She should have known better

My wife keeps a jar of kimchi in the fridge, she’ll add a spoonful to veggies. It’s pretty good but it’s not the torch version.

What mess? I tend to like about any sauce that is orange. I've had great sauces that weren't. but them orange'uns is good. The habanero ones are, but some of my favorite sauces had carrot on them.

I was looking for Key West Hot Sauce because that was the first I had that had carrot years ago. Man, look at the treasure trove I found (what's a trove?)

Yes! I love Paqui chips! Their "Haunted Ghost" chips are excellent, but you can't inhale or breathe when you pop it in your mouth and take your first couple bites or you'll potentially inhale some of the dust and end up in a coughing fit.

I totally agree with what some said above about flavor over heat, but I like both in one. I don't do heat-without-flavor. Two of my go-to sauces the last few years are these, although I wouldn't buy either from this vendor, I can get them cheaper locally:

My "sweet spot" wheelhouse on heat is somewhere in the lower range of ghost/7-pot territory. The more insane scorpions are just too damn much, I'm in hiccup hell after one or two nibbles. I will say though, Jay's peach ghost-scorpion is probably one of my favorite-tasting peppers and the ones I' was growing aren't nearly as bad as they rate on the scoville scale.

As I said I like some kick to my sauces but I've never understood folks who eat the the hottest of spices, and say they enjoy it. Whole peppers and such. Beats me. I have a deputy friend who grows his own peppers ( 7 types ) and grinds them into his own spice mix. Puts it on everything. You let the sprinkle dust get on your arm, hand or personal parts and you've got to go hit the shower right away. Things start to burn!

Mashed potatoes is a food I don't eat spicy. Just plenty of black pepper, though. Just butter or with gravy or neither. Always the best when the meat juice gets mixed in. Hmmm... maybe some pickled jalapeno slices would be good. But only with certain meals. French fries I use ketchup with hot sauce and black pepper mixed in, same with hash browns and home fries. Baked, that's more traditional like mashed.

I generally use hot sauce on ethnic foods that use chili peppers in some dishes. I still like my traditional American dishes traditional. I also love garlic, onion, herbs, and spices used to enhance flavor. I use vinegar on steamed greens. I hardly use butter any more on anything. Peppers are better for your heart

Tim's right. Peppers are better for your health.

In vitamin C, they beat oranges 3 to 1. They also have a lot of vitamins A, B, and E. And some studies say capsaicin acts as an antioxidant to protect your cells and helps tamp down inflammation. That's better than butter.

But I still use lot's of butter, lard, duck fat, bacon fat etc. As well.

I passed my last checkup just fine. No one was more surprised than me. My dad died fairly young ( heart attack). And both of my brothers have some serious health issues. On the other hand I smoke a pack of cigarettes a day and drink more than I should. And I'm in good health. Go figure.
