Bacon grease - The 1947 - Present Chevrolet & GMC Truck Message Board Network

I have to lay off dairy for one month and I cook everything in butter. I figured I would cook up a couple of pounds of bacon and save the fat/grease and cook with it for a month.

Whats the proper way to store this? When I was a kid one my buddies mom only used bacon fat for cooking and it was always out there on the counter. No one ever died from her cooking, just the opposite ... delicious.

Leave on the counter, or put it in the fridge?

I think my mom kept it in the "icebox" (refrigerator, but that's what we called it).

Eventually there would be four or five jars and some would have to be thrown out

My wife leaves it on the counter (covered) sometimes

Then sometimes she puts it in the frig

As long it doesn't smell rancid. It's okay. IMO

It last about 2 or 3 weeks out of the frig.

And a lot longer in the frig.

If I was doing it I would keep it in the Frig.

But I am not in charge of the Kitchen

When I was a kid, my dad did that. He would leave it out on the weekends, when it was used the most, and put it in the fridge after that.
They always used some kind of whipped margerine when I was a kid. I got into using real butter as and adult and never went back. I don't use much nowadays, but it is all I do use. When I found out you could freeze it, game changer.

Mom always left it out...also left out the lard bucket...
I dont know if you'll get much grease from few lbs of bacon...i dont, but I buy the better quality bacon that has more meat than fat..
I would probably fridge it if it was small quantities..you might try to find some lard if you can..

I use tallow, lard,and duck fat depending on what I'm cooking. It never seems to go bad.

Wait....I think I'm having a heart attack.

I like the cheap bacon, only the best is branded Bar-S. It is the best tasting and makes the best and most bacon grease. Bacon grease doesn't require refrigeration if you're using it on a regular basis, but I usually put it in a covered container in the refrigerator because it's easy to do so and sometimes ants will discover it when left out.

Go to the grocery store and get a box of lard. Around here it comes in the same type of box that real butter comes in. On the box it says "Refrigeration not required".

To answer your question my mom always left the bacon grease on the counter, but she left everything on the counter. My wife says she doesn't understand how my brother and I ever made it through childhood....

... We are both still alive 78 years later.

I'm not much of a cook but a little bacon grease goes a LONG way, and there's no shortage of it. I think I'd get a month's worth in a week

I store it in a jar on the counter, dump out the old on occasion. Seems olive oil would work for you too, but I'm no doctor. I only know I like bacon, it's good for you because it tastes good

How do you like it cooked? I'm not big fan of the crispy bacon, although I will eat the hell out of it

If ever there were a true God's gift, it would be bacon. I remember growing up, there was always a coffee can of bacon grease on the stove top.

I couldn't leave it out. My German Shepherd would get it in about two seconds. He's a sneak thief and he's big enough to reach about anything.

He has stolen a pizza, a whole chicken and a half a gallon of milk, (That was a mess) And the list goes on. For such a big dog he can manage to slip right past you without being noticed. He's fast and tricky.

Our nephew raises pigs and we buy half a hog maybe every other butcher time. He feeds them well no extra chemicals and such. I have them cut my bacon thick and cooking two lbs gives me a couple cups of fat.

As far as olive oil goes I know it’s crazy good for you but I hate it.

Microwave for me..wrapped in paper towels, minute per slice, unless I use thick cut..then I do minute per slice, plus one minute..not all mws are the same though..
I like this way , less grease and shrinkage

Me too. Works great. And if you have a rack and line the pan with foil it doesn't make a mess. And the flatter bacon is better for BLT's. It's not all curled up.
