Need door latch help.

I am installing new doors and latches. The latch is too tight on the catch. If I shim the catch,the bolts that hold the catch on hit the door. Do I need to modify the latches or catches? Any help would be great.

The catches should have an offset that keeps the bolts recessed. The only thing I can think of is that "new" doors may have some extra material behind the countersunk holes for the latch. Pictures???
