Neat stuff to watch. I had a hard time listening to the lady though. She sounded too excited about the chance to sell everything.

I don't think I'd have a huge problem driving those low mileage vehicles. They're not priceless artwork, they're just unmolested vehicles. There are plenty of extremely well restored versions of them around and some look better than new. Plus you'd have to do plenty of work to drive them. All the rubber brake components need replacing, the old seals are going to fail soon after startup, the old gaskets won't last long, weatherstrip and vinyl are likely to give out before long. If you did make it driveable you'd have plenty of work to get it and keep it there. I think the neatest thing is that you'll get as close as you can to experiencing new car quality from the year the vehicle was new.
