Then I put the stock engine stands in the six cylinder position so the engine mounted in the same location. I used a set of used 2010 Camaro exhaust manifolds, and had to do a lot of sawing and welding on the stock engine stands to make them clear everything.

Would the Hooker manifolds have cleared this?
I've not done any test fitting of any type of parts on 67-72 trucks, so I unfortunately don't have an answer for you either way.
