One of my friends sons is basically doing everything you are but to a 58 Ford wagon four door. He got the complete thing minus drive train and is just going to town with it.

I don't dislike Granadas at all. My dad sold these new. I liked the two doors a lot. Course back then I had only been out of HS for a couple of years and owning a four door was just something a young guy wouldn't do hah. Now as a father and grandfather a four door definitely has its advantages over a two door.

Anyway its just a thought ... carry on.
My bet is initial investment of the late 70's model Granada vs something older that's as easily adaptable.
