The skinny plastic steering wheels used on the squarebodies don't lend themselves to leather wrap.
I would look into wrapping one of the larger diameter wheels that GM used in the 1988-1994 GMT400 C/K series and 1988-1991 R/V series squarebody SUV.
The early 1990's GMT400 SS and Sport truck models had factory leather wrapped wheels but good luck finding one.
Some of the Astro and fullsize G series vans are rumored to have used similar but not exactly the same wheels as early as 1985.

This is a faux leather wheel from a 1988-1994 GMC CK truck.
Four spoke F body, J body (Cavalier etc) and A body Celebrity steering wheels are another option. They probably used similar or the same wheels on the X body (Chevy Citation & similar rigs from Buick, Olds, and Pontiac).
This is an early 1970's Chevelle SS wheel... Same as the J body wheel with an SS horn button and an earlier date code.
This is a Chris-Fix howto on installing new leather wheel wrap using a baseball stitch and curved needles. Tedious and time consuming but not terribly difficult.
