'Stock' replacement spring questions

Getting ready to start the refurb (again), and have some stock spring questions. Somewhere around 2000 I put a set of 2.5in springs up front with blocks in the rear. I'm wanting to go back to stock height, and am looking at one of the online spring places (General Spring, SD Truck Spring, etc.).

For the fronts, what is the thought between the 2 leaf vs 3 leaf? I think the originals were 2, but I'm not positive. I assume the 3 leaf will ride a bit rougher (I'm thinking Bilsteins to help), but is there anything else to take into consideration?

For the rear, I was thinking about keeping the 51 year old stock springs with 2in blocks to help level it out - any potential issues with this? Or should I just pull the trigger on the 5/1 leaf replacements?

Last question - does anybody have the correct model number for stock size Bilsteins, front and rear? I'm only seeing two choices on their site (part 24-009232 and 24-192941) - both are showing as front, but I'm not sure what the difference is.
