A bigger engine won't change the fact that those gears are too high for use with 33" tires. Granted the 350 will have more torque but the engine still won't be able to run in it's optimum rpm range. The lower the rpm's doesn't mean better mpg's. Your mpg likely won't be much if any better than the 8-10 you are getting now.
