Tire Size?

Hey I have a 69 stepside that I just bought some 20x 8.5 wheels for and was wondering what would be a good size tire to run on them?

Mine is running 20x8.5 (255/40) and 20x10 (295/40) Toyo Proxes S/T ii's; perfect IMO. (Lowered 4.5/6")
