If you use a 88-98 booster is there a non plastic master cylinder that will bolt up?

Yes. You can use a '73 and up master cylinder that is for the type of braking system that you have. IE: disc/drum or disc/disc.

So most master cylinder boosters interchange. Like a 98 booster with a 73 master?

Yes that is correct. Pretty much all the GM brake masters and boosters from '73 and up will interchange.
